Cette conférence – et le livre sur lequel elle s’appuie – vise à décrypter un mouvement vers le sauvage qui serait à l’origine d’un nouveau récit alimentaire nous enjoignant à nous ensauvager nous-même pour des raisons de santé, mais aussi et peut-être surtout pour des considérations morales et politiques. Il y sera ainsi question de romantisation du passé, de marchandisation de la nature, d’optimisation de soi et de primitivisme nutritionnel. Les enquêtes de terrain qui seront présentées et discutées – en français et en anglais – ont été réalisées au sein de six pays européens et portent entre autres sur la consommation de viande de chasse, le renouveau de la pratique du jeûne, le marché du vin "nature" ou encore la cueillette urbaine de plantes comestibles.
